Mixed Green Salad with Strawberry, Feta, Red Onion, and Raspberry Vinaigrette

Mixed Green Salad

Pair the 2023 J. Lohr Stairway Vineyard Rosé with this wonderful springtime salad. The wine's ripe fruit character and bright acidity complements the sweetness of the strawberries and raspberries while balancing the creamy richness of the feta cheese. This pairing creates a harmonious balance of flavors, perfect for a light lunch or a refreshing al fresco supper course.

Ingredients:

  • 6 cups mixed greens (such as spinach, arugula, and leaf lettuce), washed and dried
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup thinly sliced red onion
  • 1/2 cup fresh raspberries
  • 2 Tbsp. raspberry vinegar
  • 2 Tbsp. extra virgin olive oil
  • 1 tsp. honey
  • Salt and pepper to taste

Instructions:

Prepare the Raspberry Vinaigrette

  1. In a blender or food processor, combine the fresh raspberries, raspberry vinegar, olive oil, honey, salt, and pepper. Blend until smooth and well combined. Taste and adjust the seasoning if necessary. Set aside.

Assemble the Salad

  1. In a large salad bowl, add the mixed greens.
  2. Scatter the sliced strawberries, crumbled feta cheese, and thinly sliced red onion over the greens.
  3. Just before serving, drizzle the raspberry vinaigrette over the salad.
  4. Toss gently to coat the greens evenly with the dressing, ensuring all ingredients are well combined.
  5. Divide the salad among serving plates or bowls.
  6. Optionally, you can garnish with additional fresh raspberries or a sprinkle of feta cheese.
