Tacos al Vapor

Recipe courtesy of Yaneth Salas, J. Lohr Warehouse Associate

Serves 4-6

Ingredients:

Potato Tacos

  • 2 lb. potatoes
  • 1 cup crumbled Cotija cheese
  • 12 corn tortillas
  • 1 medium white onion, thinly sliced
  • ½ cup cooking oil
  • Salt, to taste
  • Black pepper, to taste

Salsa Verde

  • 1 lb. tomatillos, husks removed and rinsed
  • ¼ cup cilantro
  • 2 serrano peppers
  • 2 garlic cloves
  • 1 tsp. Knorr chicken bouillon seasoning
  • Salt, to taste

For Serving

  • ½ small head of cabbage, finely shredded

Instructions:

Potato Tacos

  1. Boil the potatoes in salted water until fully cooked.
  2. Drain the potatoes and let them cool just enough to handle. Peel and place in a bowl. Add salt, black pepper, and Cotija cheese. Mash until smooth.
  3. Heat the cooking oil in a small pot.
  4. Warm the tortillas on a hot comal or griddle. Add a portion of the potato mixture to each tortilla and fold in half.
  5. Arrange a layer of tacos in a steamer. Drizzle generously with some of the warm oil to prevent the tacos from sticking together. Scatter some sliced onion over the tacos.
  6. Repeat with the remaining tacos, oil, and onion. Cover the steamer and steam over medium heat for about 30 minutes.
  7. Meanwhile, shred the cabbage and soak it in water with a produce disinfectant, following the product’s instructions. Drain well.

Salsa Verde

  1. Cook the tomatillos in water until tender.
  2. Drain and blend with the salt, garlic, serrano peppers, cilantro, and a little Knorr seasoning.
  3. Serve the steamed potato tacos topped with cabbage and salsa verde.
