Cherry Tomato Confit With Goat Cheese
Level up your appetizer game with this Tomato Confit and Goat Cheese dish. Simple, impressive, and sure to be a fan favorite! Recipe courtesy of Diane Morrisey.

Cook time: 15-30 minutes
Serving size: 6 to 10
Ingredients:
- 1 to 2 pints cherry tomatoes (any variety works, but recommend a mix of Sun Golds and Round Reds)
- 6 to 8 garlic cloves, peeled and slightly smashed
- 1 ½ cups extra virgin olive oil
- 1 block of goat cheese
- Salt and pepper, to taste
- Fresh herbs (we used rosemary and thyme)
Directions:
- Preheat oven to 450°F..
- Toss the tomatoes in olive oil, then add salt, fresh herbs, and garlic
- Roast in oven for 15 minutes, take out to stir, and then roast for another 10 to 15 minutes or until the tomatoes begin to caramelize and are completely softened.
- Spread over grilled baguette slices.
