Cherry Tomato Confit With Goat Cheese

Tomato Confit

Level up your appetizer game with this Tomato Confit and Goat Cheese dish. Simple, impressive, and sure to be a fan favorite! Recipe courtesy of Diane Morrisey.

Prep time: 10 minutes
Cook time: 15-30 minutes
Serving size: 6 to 10

Ingredients:

  • 1 to 2 pints cherry tomatoes (any variety works, but recommend a mix of Sun Golds and Round Reds)
  • 6 to 8 garlic cloves, peeled and slightly smashed
  • 1 ½ cups extra virgin olive oil
  • 1 block of goat cheese
  • Salt and pepper, to taste
  • Fresh herbs (we used rosemary and thyme)

Directions:

  1. Preheat oven to 450°F..
  2. Toss the tomatoes in olive oil, then add salt, fresh herbs, and garlic
  3. Roast in oven for 15 minutes, take out to stir, and then roast for another 10 to 15 minutes or until the tomatoes begin to caramelize and are completely softened.
  4. Spread over grilled baguette slices.
  5. Serve with J. Lohr Estates Riverstone Chardonnay or J. Lohr Estates Los Osos Merlot.
